DIEGO’S POKE BOWL

Poke Bowls

Serves: 10

Ingredients:

1 kg cooked sushi rice

Poke Tuna

1 kg fresh tuna

100 grams red onion, finely chopped

50 grams green onion, finely sliced

100 ml soy sauce

50 ml eel sauce

25 ml ginger oil

25 ml sesame oil

10 grams white sesame seeds

20 grams fresh ginger, grated

Toppings:

2 cucumbers, diced

2 carrots, shredded

5 sheets toasted nori seaweed

200 grams cooked kale

2 mangoes, diced

Pineapple, diced

250 ml teriyaki sauce as dressing

Preparation

Place the sushi rice in the center of a bowl. Arrange all the toppings around the rice, with the tuna in the center. Garnish with sesame seeds, green onion, and drizzle with gluten-free soy sauce or pineapple teriyaki sauce.
